Some days, you crave a rich, buttery Matar Paneer… but the thought of standing in the kitchen for an hour is enough to make you order takeout.
This recipe is for those days.
No fancy techniques. No endless sautéing. No cream. Just one pressure cooker, simple ingredients, and 2 whistles later, you have a creamy, comforting Matar Paneer Butter Masala that’s perfect with hot rotis or a bowl of steamed rice.
What You’ll Need
For the Onion Paste
- 2 medium onions, chopped
- 5–6 garlic cloves
- 1-inch ginger
- 2–3 green chillies
Blend everything into a smooth paste.
For the Gravy
- 2 tbsp oil
- 1 cup tomato-carrot puree
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1½ tsp coriander powder
- Salt to taste
- 2 tbsp muskmelon seed paste
- 200–250 g paneer, cubed
- 1 cup green peas
- 1–1½ cups water
Let’s Cook!
Heat oil in your pressure cooker and add the onion paste. Cook until it turns beautifully golden and your kitchen starts smelling amazing.
Now pour in the tomato-carrot puree and stir well. Add turmeric, red chilli powder, coriander powder, and salt. Let the masala cook patiently until you see the oil separating—that’s when you know the magic is happening.
Here’s the ingredient that makes this curry extra special: muskmelon seed paste. It creates a rich, velvety texture without adding cream, making the gravy silky and delicious.
Finally, add the paneer cubes, green peas, and enough water to get your preferred gravy consistency. Close the lid and cook for 2 whistles.
That’s it.
Open the cooker, give everything a gentle stir, and watch the creamy butter masala come together.
Serve It With
- Fresh phulkas
- Butter naan
- Jeera rice
- Steamed basmati rice
A Few Tips
- Don’t skip the muskmelon seed paste—it makes all the difference.
- Add paneer at the end so it stays soft and tender.
- Want it spicier? Toss in an extra green chilli while blending the onion paste.
This is the kind of recipe you’ll keep coming back to on busy weekdays because it’s quick, comforting, and tastes like you spent way more time cooking than you actually did.
